Where are you from and where are you now?
Originally from Conneaut, Ohio. I moved to Rochester in 2007 and never looked back! I currently live in Brighton, in the 12 Corners area.
Have you always been a chef/do what your currently do? If not, what else have you done?
Chef is a strong word. I’m mostly self-taught and concentrate only on sauces. I run a sauce bottling factory by day and enjoy creating new sauce recipes and growing their brands. FUN FACT: I’m a former radio personality, having done 15 years with Clear Channel Radio / iHeartMedia
What was your introduction to cooking/baking/food?
My grandfather, Peter Guglielmo, taught me how to “can tomatoes” in his basement when I was young.
Where and how did you train? Who did you learn from (apprenticeships, family, friends, etc.)
I learned the old school method of bottling from my grandpa when I was young.. boiling down tomatoes and sealing them in mason jars. Since going pro, I have completed thermal processing school via Cornell University as well as have a certificate in the principles of HACCP and am one of my facility’s SQF Practitioners (Safe Quality Food).
When you are “off the clock” do you like cooking or do you prefer someone else to do it?
LOVE it. I think my wife thought I’d stop making sauce every Sunday once I started making sauce every day for a living but, no, that’s still my happy place.
What is your favorite thing to bake/dish to make?
Sunday sauce, the whole deal. Fresh pasta, sauce, meatballs, sausage, bread, etc.
What is your favorite food to eat? (list more than one if you like)
Spoiler alert, it’s pasta. After that, I love trying different the popular pizza joint anywhere I travel and of course, love me some chocolate cake.
Is there a chef/business colleague you admire the most? Who and why?
I look up to the titans of my industry. Locally, that would be Erin Tolefree at Baldwin-Richardson Foods and Stefani LiDestri at LiDestri Foods. Stefani’s father, Giovanni, is my answer to “if you could have lunch with anyone who would it be”.
Why are you serving as a judge for the 2023 Chocolate Ball? Do you do any other charity work?
They told me I get to eat as much cake as I need to.. LOL! JK, I love supporting local charity. I currently sit on the Board of Directors for Rochester Rotary and Big Brothers Big Sisters of Great Rochester. I’m also newly voted on to the board of The Rochester Broadway Theater League and hope to join the board at St. Ann’s Community by the end of 2023.
What’s a fun fact about you that many people might not know?
When I was 16, I lived 1 full year in Italy as a Rotary Exchange Student.
